Sesame Fried Chicken

Ingredients

Chicken Marinade:

Seasoning Dredge:

For Frying:

Sesame Chicken Glaze:

  • ¼ cup soy sauce
  • ¼ cup honey
  • 2 tbsp brown sugar
  • 2 tbsp rice vinegar
  • 2 tbsp ketchup
  • 1 tsp toasted sesame oil
  • 2 garlic cloves, grated
  • 1 tsp ginger, grated

Broccoli Slaw:

  • 1 ½ cups shredded broccoli slaw (or slaw of choice)
  • 1 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1 tsp toasted sesame oil
  • Salt, to taste

To Assemble:

  • 4 brioche buns, toasted
  • Scallion greens, thinly sliced
  • Toasted sesame seeds

Directions

  1. In a bowl, add the chicken thighs, buttermilk, soy sauce, vinegar, garlic powder, and white pepper. Mix the chicken until fully coated, then marinate for at least 30 minutes or up to overnight.
  2. While the chicken marinates, mix all the slaw ingredients in a bowl. Then let it sit for 15-30 minutes to absorb all the flavors.
  3. Mix flour, cornstarch, baking powder, and spices together in a bowl. Then add ¼ cup of the buttermilk marinade to form shaggy clumps in the flour. Dredge the chicken thoroughly, squeezing the flour into the chicken. Once fully coated, let the chicken rest for 10 minutes.
  4. Heat Crisco to 350-365ºF in a deep skillet. Once hot, fry the chicken (2 thighs at a time) for 5-7 minutes, or until golden brown and crispy. Remove, and set aside on a wire rack or paper towel.
  5. While the chicken rests, add all the sesame glaze ingredients to a skillet. Heat over medium heat and whisk until combined. Once the sauce begins to simmer, add the fried chicken and coat on both sides. Once fully coated, remove and set aside reserving the leftover sauce on the side.
  6. Assemble the sandwiches by toasting the buns. Then layer the slaw on the bottom bun, followed by the glazed chicken. Drizzle with more of the sesame glaze, then garnish with scallions and sesame seeds. Enjoy!
