Whole-Grain-Cranberry-Almond-Bars-Full

These bars would be a great item to bring for a cookout, bridal shower, or even a dinner party! Super easy to make and very healthy!

Ingredients

1 cup whole wheat flour
1 egg
1 cup rolled oats
1 cup chopped almonds
1/4 cup flax seeds
1/2 cup dried cranberries
1/2 tsp Rumford Reduced Sodium Baking powder
1/2 tsp Clabber Girl Baking Soda
1/3 cup orange juice
2 tbsp vegetable oil, such as canola
1/3 cup honey

Directions

Preheat the oven to 350 . Coat an 8 x 8 or 9 x 9 baking pan with non stick cooking spray or line with parchment paper.

In a medium size bowl, mix together the flour, oats, flax seeds, Rumford Reduced Sodium Baking Powder, and baking soda. Make a well in the center and whisk in the orange juice, oil, honey and egg. Stir in the almonds and cranberries.

Spread the batter evenly in the prepared pan and cut through the moist dough with a knife, forming 3 evenly spaced rows. Turn the pan, make 4 more cuts of evenly spaced rows. (The pre-cutting will make it easier to cut through and separate after baking).

Bake for about 24 – 28 minutes or until lightly browned. Cool and serve.
