A healthy alternative for a pizza!
1/2 cup quick-cooking rolled oats
1 cup sliced green pepper
2 1/2 tsp Clabber Girl Baking Powder
2 cups shredded mozzarella cheese (8 oz.)
1/2 tsp salt
1/4 cup shredded parmesan cheese
1 package active dry yeast
1/4 cup canola oil
3 oz sliced pepperoni
1 tsp sugar
Cornmeal (to sprinkle on pan)
1 lb cooked Italian sausage
1 cup warm water
14 or 15 oz jar of pizza sauce
1 cup sliced mushrooms
1 cup all-purpose flour
Suggested Toppings:
1 cup whole wheat flour
1 cup chopped onion
In a small bowl or measuring cup, mix yeast and sugar in the warm water. Let stand 5 minutes for yeast to grow. In a large bowl, stir together all-purpose flour, whole wheat flour, oats, Clabber Girl Baking Powder, and salt. Add oil and yeast mixture. On a lightly floured surface, knead dough for 25 strokes. Cover; let dough rest for 10 minutes. Grease two 12-inch pizza pans and sprinkle lightly with cornmeal. Pat or spread crust onto bottom of pans, building up the outside edges. Spoon pizza sauce evenly over pizzas, and add your choice of toppings and cheeses. Bake in a 400 F oven for 15 to 17 minutes or until crust is browned and top is bubbly. For grilled pizza: Preheat grill to high heat. Fold the pizza dough in half and add in olive oil to the underside, spreading it evenly. Sprinkle a pizza peel with cornmeal, then transfer the folded pizza dough to it. Unfold the pizza dough, fold over the other side and drizzle olive oil to this underside too, spreading it evenly. transfer the pizza to the pre-heated grill using the pizza peel. Cook the dough about 3 minutes, or until the crust is golden on the edges. Transfer the pizza back onto the peel and use the pizza peel to flip the dough over. Immediately add sauce, cheeses and desired toppings. Cook 2-3 more minutes until the crust is slightly crunchy and the cheese is melted. Serve immediately.
