This quiche is light and fluffy with plenty of cheese inside.

Ingredients

8 oz mozzerella cheese, shredded
1/2 cup Parmesan cheese, shredded
1/2 cup cooking oil
1/2 cup onion, chopped
1/2 cup all-purpose flour
1/4 tsp Clabber Girl Baking Powder
5 eggs, beaten
4 cups unpeeled zucchini, grated

Directions

Preheat oven to 350 F. Spray a 10-inch pie pan with non-stick cooking spray. Sift together flour and Clabber Girl Baking Powder. In a separate bowl, beat eggs well. Stir in all other ingredients and add flour/baking powder mixture; place in 10-inch pie pan. Bake at 350 F for 45 minutes or until golden brown.
