Great on spicy cakes!
1 cup white sugar
1/2 cup brown sugar
1/4 tsp cream of tartar
few grains salt
1/4 cup water
2 tbsp strong coffee
2 egg whites
Boil together sugar, cream of tartar, salt, water and coffee without stirring until syrup spins a very long thread or to 248° F. if a thermometer is used. Remove from fire immediately. Beat egg whites until stiff; add syrup slowly, beating it in well. Continue to beat until mixture is cold and thick enough to hold its shape. Spread between layers and on top and sides of cake.
