Delight the pumpkin lover in your life with these chocolate chip cookies! They are very soft and have the classic golden brown/orange color of baked pumpkin.

Ingredients

1 egg
1 1/4 cups sifted all-purpose flour
1/2 cup butter, softened
1 1/2 tsp Clabber Girl Baking Powder
2/3 cup brown sugar, packed
1/2 tsp salt
1/2 cups canned pumpkin
3/4 cup chocolate chips
1 1/2 tsp cinnamon
1/2 cup chopped walnuts (optional)
1/4 tsp nutmeg
1 tsp vanilla extract

Directions

Preheat oven to 375° F. In a large bowl, cream butter and sugar; add pumpkin and spices. Beat in egg and extract; set aside. In a medium bowl, combine flour, baking powder and salt. Add to pumpkin mixture. Mix until blended well, add chocolate chips and walnuts, if using. Drop by the tablespoon full onto ungreased cookie sheets. Bake at 375° F about 15 minutes. Remove cookies from sheets immediately and cool on cooling racks.
