2 C. granulated sugar
1/4 tsp. Mace (Spice)
3 C. all-purpose flour
1 1/2 C. vegetable oil
1 tsp. salt
2 C. pumpkin puree
2 Tbsp. Clabber Girl Baking Powder
4 eggs, beaten
2 Tbsp. Clabber Girl Baking Soda
1/2 C. nuts, optional
This recipe can be made into a quick bread or muffins-I prefer the muffins since they are easier to freeze if you don’t plan on eating all of them at once. You may substitue pumpkin pie spice instead of using the individual spices, use 1 3/4 tsp. You can use any combination of nuts and raisins that total 1 cup.Combine flour and seasoning in a bowl. In a separate bowl blend sugar and oil, stir in eggs; add pumpkin. Mix dry ingredients into pumpkin mix. Add raisins and nuts if using them. Pour batter into loaf pans or muffin tins and bake at 350° F. For bread, bake approximately 45-50 minutes, or until toothpick inserted in center comes out clean. Muffins – 30 minutes, or until muffins spring back when pressed lightly. Makes 24 muffins.
