Cake:
1/2 tsp salt
1/4 tsp salt
4 tbsp butter
1/2 cup milk
5 tbsp unsalted butter
1/2 cup honey
3 to 4 peaches, sliced (about 3 1/2 cups)
1 egg
Streusel:
1 cup all-purpose flour
1/2 cup all-purpose flour
1 cup corn meal
1 tsp cinnamon
2 tsp Clabber Girl Baking Powder
1 1/2 cups pecans, diced
1/2 tsp Clabber Girl Baking Soda
1/2 cup brown sugar, packed
Preheat the oven to 375° F. Brush the bottom and sides of a 9×13-inch baking dish with butter.
For the batter:
Cream together the butter and honey on medium speed, then add the egg and mix for one minute. (The mixture may look lumpy-it is okay). Whisk together the flour, corn meal, baking powder, baking soda and salt. Add the dry ingredients alternately with the milk, beginning and ending with the dry ingredients. Stir in the peaches and spoon the batter into the prepared baking dish.
For the streusel:
Whisk together the flour, cinnamon, pecans, brown sugar and salt. Add the butter and mix by hand to form crumbs. Sprinkle the streusel over the batter.
Bake at 375° F. for 50 – 60 minutes. (The amount of peaches make the batter unusually moist and therefore hard to use the toothpick or cake tester method). The cake is done when it springs back when pressed ever so gently in the center.
