Peach Cobbler with a Crispy Oat Topping

Ingredients

Filling:

 

Topping:

  • ½ C. all-purpose flour
  • 2 Tbsp. granulated sugar
  • 1 Tbsp. Clabber Girl® Corn Starch
  • ¼ tsp. Clabber Girl® Baking Powder
  • Pinch of salt
  • 3 Tbsp. butter, chilled and cut into cubes
  • 2-3 Tbsp. milk
  • 1 egg white
  • 3 Tbsp. chopped almonds
  • 3 Tbsp. quick rolled oats
  • 3 Tbsp. turbinado sugar

Directions

Filling:

  1. Preheat oven to 350°F and spray an 8×8 pan with Baker’s Joy®
  2. Combine all ingredients together in a large bowl.
  3. Stir occasionally while preparing the topping.

 

Topping:

  1. In a large bowl, whisk together the flour, sugar, corn starch, baking powder and salt.
  2. Add the butter and cut into the flour mixture with a pastry blender or your fingers, until the butter is about pea sized.
  3. Add 2 tablespoons of milk and stir to create a sticky dough. Add the remaining tablespoon of milk if needed. Dough should be sticky but not runny.
  4. In a medium bowl, whisk together the egg white, almonds, oats and turbinado sugar until well blended.
  5. Pour the peach mixture into the prepared pan.
  6. Drop teaspoonfuls of dough over the peaches. There will be areas that are not covered with dough.
  7. Drizzle the oat mixture over the dough.
  8. Bake for 35-40 minutes or until bubbly and lightly browned.
