2 cups sifted cake flour*
*if all-purpose flour is used instead of cake flour, reduce flour 2 tbsp
1 1/3 cups sugar
2 1/2 tsp Rumford Baking Powder
1 tsp salt
1/2 cup vegetable shortening
1 cup less 2 tbsp milk
1 1/2 tsp vanilla
2 eggs
Prepare two 8-inch round baking pans by spraying with cooking spray or grease with shortening and dust with flour to prevent sticking. Preheat oven to 375° F. Sift flour, sugar, Rumford Baking Powder and salt into large mixing bowl. Drop in shortening, add 2/3 of the milk and vanilla; beat for 2 minutes by the clock. Scrape bowl and spoon often during entire mixing. Add eggs and remainder of milk; beat two minutes longer. Pour batter into two layer pans and bake in moderately hot oven (375° F) for 25-30 minutes. Frost with your favorite frosting and decorate as desired.
