1 C. sugar
2 eggs
2 tsp. vanilla extract
2 1/2 C. old-fashioned rolled oats
1 tsp. salt
2 C. all-purpose flour
1 C. margarine or butter
1 tsp. Clabber Girl Baking Soda
1 C. packed brown sugar
1 tsp. Clabber Girl Baking Powder
Preheat oven to 350° F. Grease or line a cookie sheet with parchment paper. Set aside.
In a large mixing bowl, cream margarine and sugars. Add eggs and vanilla; beat well. Stir in salt, oatmeal, flour, baking powder and baking soda.
Drop cookies onto cookie sheet by the heaping tablespoonful for nice, large cookies.
Bake at 350° F. for 10 to 12 minutes or just until slightly golden. Makes about 4 dozen cookies.
