Cute for a Halloween party with the family!
1 1/2 cup all-purpose flour
1/4 cup Parmesan cheese (reduced sodium variety optional)
1/2 cup whole wheat flour
Black or green olives (sliced into rounds for the eyes)
1/2 cup rolled oats (quick-cooking)
2 1/2 tsp Rumford Reduced Sodium Baking Powder
1/4 cup canola oil
1 package active dry yeast
Cornmeal (to sprinkle on baking sheets)
1 tbsp granulated sugar
14 to 15 oz jar of reduced sodium pizza sauce
1 cup warm water
8 oz mozzarella cheese (sliced into strips, reduced sodium variety optional)
In a small bowl or measuring cup mix yeast and sugar in the warm water. Let stand 5 minutes for yeast to grow.
In a large bowl combine flours, oats and baking powder. Add oil and yeast mixture.
On a lightly floured surface, knead dough for 25 strokes. Cover and let dough rest for 10 minutes.
Preheat oven to 400° F. Grease two baking sheets and sprinkle lightly with cornmeal.
Separate dough into four balls and pat or spread crust into circles on the pans, building up the outside edges. Spoon pizza sauce evenly over pizzas, and add cheese, giving the appearance of bandages as shown in the photo. Add olives for eyes. Bake at 400° F. for 15 to 17 minutes or until crust is browned and top is bubbly.
