Traditional Linzer cookies require you to make little sandwiches with jam in between. These are just as beautiful and don’t require all the assembly.

Ingredients

1/4 tsp salt
Garnish: sliced almonds
1/2 tsp cinnamon
3/4 cup butter, softened
3/4 cup granulated sugar
2 egg yolks
1 1/2 cups all-purpose flour
1 tsp vanilla extract
1/2 cup ground almonds
1 tsp almond extract
1/2 tsp Clabber Girl Baking Powder
Jam or jelly (red currant or raspberry)

Directions

Preheat oven to 300 F. Mix together flour, almonds, Clabber Girl Baking Powder, salt and cinnamon. In a separate bowl, blend butter and sugar. Add flour mixture slowly and beat until just combined. Roll into 1 1/2 inch balls and place 2 inches apart on parchment lined baking sheets. Press an indentation into the top of each for filling. Bake for 20 minutes, until golden around edges. Transfer to cooling rack and top with 1/2 tsp. jam or jelly. Decorate with sliced almonds.
