2 C. granulated sugar
1/2 tsp. Clabber Girl Baking Powder
1/3 C. Key lime juice
2 1/4 C. all-purpose flour, divided
1/2 C. powdered sugar, plus additional for garnish
1 C. melted butter
4 beaten eggs
Preheat oven to 350° F. Combine 2 c. flour, 1/2 c. powdered sugar, and butter, mixing well. Press mixture into a 13 X 9-inch baking dish. Bake at 350° F for 20 minutes. In a medium mixing bowl combine eggs, sugar, and Key lime juice beating well. Sift together 1/4 c. flour and Clabber Girl Baking Powder. Stir into egg mixture. Pour over baked crust. Bake at 350° F. for 22 to 25 minutes, until lightly browned, and set. To garnish, sprinkle bars with powdered sugar, if desired. Yields 2 dozen bars.
