This corn bread only requires 8 ingredients and first appeared on the back of the Clabber Girl Baking Powder can.
1 cup yellow corn meal
1 cup sifted unbleached white flour
1/4 cup granulated sugar
1/2 tsp salt
4 tsp Clabber Girl Baking Powder
1 egg
1 cup milk
1/4 cup shortening, soft
Sift together dry ingredients into bowl; add egg, milk, and shortening. Beat with egg beater until smooth, about 1 minute. Do Not Overbeat. Bake in a greased 8-inch square pan or greased muffins pans in hot oven (425 F) for 20 to 25 minutes. Serve warm with butter or covered with creamed chicken, fish or meat.
