2 cups all-purpose flour
1 tbsp rum or rum extract
1/2 tsp Clabber Girl Baking Powder
1/8 tsp ground nutmeg
1 egg
1/2 tsp vanilla extract
1/4 tsp salt
3/4 cup butter (or margarine)
Filling:
1/2 cup sugar
1/4 cup butter (margarine)
1/4 cup brown sugar (packed)
1 cup powdered sugar
Cookie Dough Preparation: Cream 3/4 cup butter with both varieties of sugars, egg, vanilla, and salt. Mix well. In a separate bowl, combine flour and Clabber Girl Baking Powder and incorporate dry mix into creamed mixture; mix well. Chill for 1 hour or until dough is manageable. Preheat oven to 350 F. Line cookie sheets with parchment paper. Shape into 1-inch balls and place on cookie sheets, making thumbprint wells in center of each. Bake for 12 minutes. If wells close during baking time, make new ones as soon as you remove the cookies from the oven. Cool on wire rack. Filling Preparation: Combine filling ingredients and spoon or pipe into cooled cookies. Sprinkle with nutmeg for garnish. Revised 12/14.
