1/2 C. (one stick) butter
1/4 C. all-purpose flour
3 eggs
1 tsp. cinnamon
3 C. Baking Mix
1/4 C. (half stick) butter
3/4 cup firmly packed brown sugar
1/2 tsp. apple pie spice
1 C. buttermilk
1 tsp. vanilla
1 C. firmly packed brown sugar
Preheat oven to 350° F. Grease a fluted tube pan; set aside.
Cinnamon Crumb Mixture:
Combine brown sugar, flour and add cinnamon. Cut in butter until mixture becomes crumbly; set aside.
Cake Batter:
In a large bowl, cream together butter and eggs. Combine Baking Mix, brown sugar and apple pie spice; blend thoroughly. Add buttermilk alternately with flour mixture. Stir in vanilla. Batter will be thick. Spoon half the batter into the tube pan; sprinkle half the cinnamon crumb mixture on top of batter. Add remaining batter and top with remaining crumb mixture.
Bake for 1 hour. Allowing cooling for at least 5 minutes then invert tube pan to release cake onto serving plate. Cool and slice.
