Makes about 12 to 15 mini loaves.
1 cup packed brown sugar
1/2 cup packed brown sugar
1 tbsp ground cinnamon
1 tsp ground cinnamon
2 apples, cored peeled and finely chopped
4 tsp Clabber Girl Baking Powder
1/4 cup granulated sugar
1/2 tsp salt
2 cups all-purpose flour
1/2 cup vegetable oil
1 cup whole wheat flour
3 eggs, beaten
1/2 cup rolled oats
1 cup milk
1/2 cup milled flax seed
Topping:
Preheat oven to 400 F and spray mini bread pans with cooking spray. (About 12 to 15) In a small bowl, toss 1/4 cup granulated sugar and chopped apples together. Set aside and mix other ingredients in a large bowl. Combine flours, oats, flax seed, brown sugar, cinnamon, baking powder and salt. Stir well until all is combined. Add oil, eggs and milk; stir until mixed well and then add apples and sugar. In a separate bowl, combine topping ingredients. Spoon batter into prepared pans and sprinkle topping on the tops of each mini loaf. Bake on center rack for 25 to 30 minutes or until tops spring back when touched lightly. Allow to cool for 5 minutes before removing from pans, and continue cooling on wire rack.
