1/2 tsp apple pie spice
1 cup Granny Smith apples, chopped
Cake Batter:
1 cup buttermilk
3/4 cup firmly packed brown sugar
1 tsp vanilla
1/2 cup butter
Cinnamon-crumb mixture:
3 eggs
1 cup firmly packed brown sugar
3 cups all-purpose flour
1/4 cup all-purpose flour
3 tsp Clabber Girl Baking Powder
1 tsp cinnamon
1/2 tsp salt
1/4 cup butter
Preheat oven to 350 F. Grease and flour a tube pan or bundt pan. Cake: Cream together sugar and butter. Add eggs one at a time, blending well after each addition. In a separate bowl, combine flour, baking powder, salt and apple pie spice; blend well and add to butter mixture alternately with buttermilk. Stir in vanilla. Batter will be thick. Cinnamon Crumb Mixture: combine sugar, flour and cinnamon. Cut in butter until mixture is crumbly; stir in chopped apples. To bake: Pour 1/2 of the cake batter into the prepared pan; pour 1/2 of the crumb mixture on top. Top with remaining cake batter followed by the balance of the crumb mixture. Bake at 350 F for 60 minutes, until cake tests done. Cool 5 minutes in pan, then cool on a wire rack before serving.
