1 tsp. Clabber Girl Baking Soda
1 C. margarine or butter, softened
12 oz. chocolate chips
3/4 C. granulated sugar
1 C. quick cooking rolled oats
3/4 C. brown sugar, firmly packed
3/4 C. chopped walnuts, optional
1 egg
2/3 C. caramel topping
1 tsp. vanilla extract (optional)
2 1/2 C. all-purpose flour
5 Tbsp. all-purpose flour (for caramel topping)
Preheat oven to 350° F. Grease a 9-inch square baking pan and set aside. In large bowl, cream butter or margarine, white sugar, brown sugar and egg. Stir in flour, Clabber Girl Baking Soda, Clabber Girl Baking Soda and salt. Add chocolate chips and oats. Mix well. Reserve 1/2 cup cookie dough. Place remaining dough mixture in bottom of a greased 9-inch square pan. Bake at 350° F. for 10 minutes or until cookie dough puffs and appears dry. While the cookie dough is baking, in small bowl, combine 5 tablespoons flour, caramel topping and teaspoon of vanilla (optional); blend well. Remove crust from oven. Sprinkle with walnuts, drizzle evenly with caramel mixture. Crumble reserved cookie dough mixture over caramel.
