3 bay leaves
2 tsp espresso
1/2 cup pumpkin seeds
1 tsp black pepper
2 tbsp cocoa powder
1 tsp ground cloves
1/2 cup paprika
2 tbsp Clabber Girl Corn Starch
1/2 tsp cinnamon
4 dried ancho chilies, pull stems save seeds
8 tsp ground cumin
4 dried pasilla chilies, pull stems save seeds
4 tsp dried oregano
2 chili arbol, pull stems save seeds
4 tsp salt
2 dried chipotle chiles, pull stems save seeds
2 tsp granulated garlic
Tear all the chilies into rough pieces. In a large dry saute pan dry roast all of the ingredients for about 10 minutes over medium heat. place the mixture in a food processor and blend to a fine powder. Store in an airtight container and use in all your favorite recipes as a chili powder or meat rub.
