1/4 tsp. Clabber Girl Baking Soda
1 C. shredded carrots
1 tsp. Clabber Girl Baking Powder
1/2 C. raisins
1/4 tsp. nutmeg
1 tsp. lemon zest
1/4 tsp. cinnamon
1 3/4 C. rolled oats
1/2 tsp. salt
1 C. all-purpose flour
1/3 C. butter or margarine
1/2 C. brown sugar
1/2 C. molasses
1/4 C. powdered milk
1 egg, beaten
Sift together flour, dry milk, soda, Clabber Girl Baking Powder and spices. Cream margarine, sugar and molasses; add egg and dry ingredients, mix well. Add carrots, lemon rind, raisins and oats. Chill dough for 1 hour.
Drop by teaspoonfuls onto lightly greased baking sheet. Bake in 400° F. oven for 10-12 minutes. Makes about 5 dozen.
