Blueberry Pancakes

Ingredients

  • 1 C. all-purpose flour
  • 1 Tbsp. granulated sugar
  • 2 tsp. Clabber Girl® Baking Powder
  • 1/4 tsp. salt
  • 1 egg, beaten
  • 1 C. milk
  • 2 Tbsp. Crisco® Pure Vegetable Oil
  • 1/2 C. blueberries

Directions

  1. In a mixing bowl, stir together flour, sugar, baking powder, and salt.
  2. In another mixing bowl combine egg, milk, and cooking oil; add to flour mixture all at once.
  3. Add blueberries and stir mixture just until blended but still slightly lumpy.
  4. For each pancake pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet (for silver dollar-size pancakes use about 1 tablespoon batter).
  5. Cook until pancakes are golden brown, turning to cook second side when pancakes have bubbly surfaces and slightly dry edges.
