Blueberry pancakes make a wondeful breakfast staple. With Clabber Girl baking powder used in the mixture, they are fluffy with the perfect texture.

Ingredients

1/2 cup blueberries
1 cup all-purpose flour
1 tbsp granulated sugar
2 tsp Clabber Girl Baking Powder
1/4 tsp salt
1 egg, beaten
1 cup milk
2 tbsp vegetable oil

Directions

In a mixing bowl, stir together flour, sugar, Clabber Girl Baking Powder, and salt. In another mixing bowl combine egg, milk, and cooking oil; add to flour mixture all at once. Add blueberries and stir mixture just until blended but suntil slightly lumpy. For each pancake pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet (for dollar-size pancakes use about 1 tablespoon batter). Cook until pancakes are golden brown, turning to cook second sides when pancakes have bubbly surfaces and slightly dry edges.
