Ingredients
2/3 C. frozen blueberries
1 C. all-purpose flour
½ tsp.
Clabber Girl® Baking Powder
½ C. butter, softened
½ C. granulated sugar
Zest of one lemon
½ C. white chocolate chips
Directions
Microwave berries in a microwave safe bowl for 1 minute; set aside.
In a bowl, whisk together the flour and baking powder; set aside.
In the bowl of a mixer, cream the butter, sugar and lemon zest together for 5 minutes on high speed.
Scrape the sides of the bowl. Add the berries and beat on medium-high speed for 2-3 minutes or until the batter is very purple.
Stir in the flour mixture on low speed. Do not overmix.
Fold the white chocolate chips in by hand.
Place the batter in the freezer for 30 minutes.
Preheat the oven to 375°F and line a baking sheet with parchment paper.
Scoop the dough onto the baking sheet, leaving a couple of inches between balls of dough.
Bake for 11-13 minutes or until lightly set.
Allow to cool on the baking sheet.
