Ingredients

1 Tbsp. Rumford Baking Powder
3/4 tsp. salt
1/4 tsp. cayenne pepper
1 1/4 c. water
3 Tbsp. lemon juice
2 Tbsp. vegetable oil
2 lbs. shrimp, peeled and de-veined
2 eggs, slightly beaten
2 c. all-purpose flour
Vegetable oil, for frying

Directions

Combine flour, Rumford Baking Powder, salt and pepper in large bowl; make a well in center. Combine water, lemon juice, 2 tablespoons oil, and eggs; add to dry ingredients, and stir until batter is smooth. Dip shrimp into batter and fry in hot oil (375° F) until browned. Drain on paper towels. Yield: 4 servings For homemade onion rings; Cut 1 large Spanish onion into 1/2-inch slices, and separate into rings. Dip rings into batter, fry until golden brown about (3 to 5 minutes)
