Crust

  1. Preheat oven to 350˚F.
  2. In a large bowl, mix the crust ingredients until a crumbly meal is formed. It will not be a solid dough.
  3. Press into an 8×8-inch pan and bake for 15 minutes.
  4. Remove from the oven.

 

Filling

  1. While crust is baking, prepare filling.
  2. In a medium bowl, whisk together the eggs and sugar until smooth and a pale yellow.
  3. Whisk in the flour and baking powder until well blended.
  4. Whisk in the lemon juice and preserves until well blended.
  5. Pour filling over baked crust and bake for 20 minutes.
  6. Cool in the pan.
  7. Dust with powdered sugar, if desired, and cut into squares.
  8. Store leftovers in the refrigerator.

Tips

Recipe can easily be doubled and baked in a 9×13-inch baking pan for approximately the same length of time.
