1/4 tsp. Clabber Girl Baking Soda
1/4 C. all-purpose flour
Muffin Batter:
1/4 tsp. salt
3 Tbsp. sugar
1 1/2 C. all-purpose flour
1 C. diced, tart apples
2 Tbsp. soft butter
1/2 C. granulated sugar
2 lg. eggs
1/4 tsp. cinnamon
2 tsp. Clabber Girl Baking Powder
1 C. sour cream
1 tsp. cinnamon
1/2 C. melted butter
1/4 tsp. ground allspice
Streusel Topping:
1/4 tsp. Clabber Girl Baking Soda
1/2 C. chopped walnuts
Preheat oven to 375° F. Prepare 16 muffin cups with oil, spraying with non-stick spray, or placing muffin liners in each location.
Muffin Instructions: In a large bowl, combine flour, sugar, baking powder, cinnamon, allspice, baking soda and salt. Add diced apples, mix to coat and set aside. In a separate medium sized bowl, whisk eggs, sour cream and butter together. Once liquid ingredients are combined, pour liquid mixture over the dry and combine together just until all ingredients become moistened. Spoon batter into muffin cups, filling each to 3/4 capacity.
Streusel Topping Instructions: In a medium bowl, mix walnuts, flour, sugar, butter and cinnamon. Once mixed, use a spoon and top each muffin with streusel.
Bake in preheated oven for approximately 20 minutes or until a toothpick inserted in center of muffins comes out clean. To help ensure even baking, muffins may be turned midway through baking process.
