1 cup chopped Granny Smith apples
3/4 cup firmly packed brown sugar
1/2 tsp apple pie spice
1/2 cup butter
1 cup firmly packed brown sugar
3 eggs
1/4 cup all-purpose flour
3 cups baking mix
1 tsp cinnamon
1 cup buttermilk
1/4 cup butter
1 tsp vanilla
Cinnamon-Crumb Mixture: Combine 1 cup brown sugar and 1/4 cup flour; add 1 tsp cinnamon. Cut in 1/4 cup butter until mixture is crumbly; Add chopped Granny Smith apples and toss until mixed. Set aside.
Cake: Cream together 3/4 cup brown sugar, 1/2 tsp apple pie spice, and 1/2 cup butter. Add 3 eggs one at a time, beating well after each addition. Alternately add 3 cups baking mix and 1 cup buttermilk. Stir in 1 tsp vanilla. Batter will be thick.
Assembly: Spoon half the batter into well-greased Bundt or tube pan. Sprinkle half the cinnamon-apple crumb mixture over top. Add remaining batter and top with remaining cinnamon-apple crumb mixture. Bake in 350° F oven for 1 hour. Cool 5 minutes. Invert on cake plate. Cool and slice.
