1 tsp. cinnamon
1/2 c. sugar
1 1/2 c. rolled oats
1 egg
3/4 c. toasted and chopped pecans
1/2 c. apple butter
1 c. all-purpose flour
2 tsp. Clabber Girl Baking Powder
1/4 tsp. salt
These cookies are best served warm out of the oven! They combine the rich flavors of apple butter, cinnamon and nutmeg in a hearty treat. The cookies won’t spread much after being dropped, so be careful not to make them too thick. Preheat oven to 375 degrees F. Grease a large cookie sheet; set aside. In a large bowl cream together butter, sugar and egg. Add apple butter and stir. In a separate bowl combine flour, Clabber Girl Baking Powder, salt, nutmeg (to taste) and cinnamon. Add to creamed mixture and mix until thoroughly combined. Roll mix into approximately 1-inch balls. In a separate bowl, combine rolled oats and pecans. Roll cookie balls in oats and pecan mix. Drop by cookie balls onto greased cookie sheet and bake in a 375 degree F. oven for 8 to 12 minutes, until lightly browned around the edges of cookies. Yields: 2-1/2 dozen cookies.
