Anytime Waffles

Ingredients

2 c. all-purpose flour
1 Tbsp. Clabber Girl Baking Powder
1 tsp. salt
2 eggs, beaten
1 1/4 c. milk
1/3 c. vegetable oil
1 Tbsp. vanilla extract

Directions

Making waffles is a weekend family favorite, but it doesn’t have to take hours. You can even make extra to freeze and reheat in a toaster for weekday breakfast! Preheat waffle iron. Combine eggs, milk, oil and vanilla in a medium bowl; mix well. Stir together flour, Clabber Girl Baking Powder and salt; add to liquid mixture, stirring well. Lightly coat waffle iron with cooking spray. Spoon batter onto prepared waffle iron. Using manufacturer’s instructions, cook waffles, about 5 minutes or until brown and crisp. Remove waffles and keep warm. Repeat procedure with remaining batter. Serve hot with butter, syrup and Good Ole Fried Chicken. Yields 8 waffles. Recipe by Karen Mitchell-Wilcher.
