1 tsp Clabber Girl Baking Powder
2 medium ripe pears, peeled, cored and sliced
1 tsp Clabber Girl Baking Soda
1 cup cranberries, fresh or frozen
1 tsp cinnamon
1 1/3 cups rice flour
1/2 tsp ginger
1/2 cup almond meal
1/2 tsp salt
1/2 cup Clabber Girl Corn Starch
1 cup rolled oats
1/2 cup potato starch
1 1/2 cups light brown sugar, packed
1 tsp xanthan gum or guar gum
12 tbsp unsalted butter, melted
Preheat the oven to 350° F. Butter a 9×13-inch baking pan. Mix together the rice flour, almond meal, Clabber Girl Cornstarch, potato starch, xanthan or guar gum, Clabber Girl Baking Powder, baking soda, cinnamon, ginger and salt. Break up any lumps. Stir in the oats, the brown sugar and the melted butter until the mixture forms coarse crumbs. Press 3 1/2 cups of the mixture evenly into the prepared pan. Scatter the pears and cranberries evenly over the surface and sprinkle with the remaining mixture. Bake for about 40 minutes or until the crust is golden brown. Cool and cut into bars.
