Slice and Bake Cookies

Never find yourself in a baking pinch!

These easy slice-and-bake cookies are great to have stashed in the freezer throughout the fall holiday season. With a crowd-pleasing cinnamon-and-sugar flavor and a texture that can stand up to dunking in milk or coffee, the cookies are perfect for everything from after-school snacks to holiday parties. Dressed up with seasonal sprinkles, they’ll take you from Halloween through Christmas. They also make a terrific little ice cream sandwich!

Sugar and Spice Cookies

1 ¾ cups all-purpose flour

1 ½ teaspoons Clabber Girl baking powder

1 teaspoon pumpkin pie spice or cinnamon

¼ teaspoon salt

1 stick butter, softened

1 cup sugar

½ teaspoon vanilla extract

1 egg

Seasonal sprinkles for decorating, if desired

In a medium-size mixing bowl, whisk together flour, baking powder, pumpkin pie spice or cinnamon and salt; set aside.

In a large mixing bowl, cream together the butter and sugar. Add vanilla and egg and mix well.

Divide dough in half; shape each portion into a log about 2 inches wide. Wrap logs in aluminum foil and freeze.

To bake, preheat oven to 400 degrees. Line baking sheet with aluminum foil or parchment paper. Remove logs from freezer. Cookies can be sliced and baked while still frozen; however, they are easier to slice if allowed to stand at room temperature for about 10 minutes.

On a cutting board, use a sharp knife to slice the logs into ¼-thick slices. Place on prepared baking sheet about 2 inches apart. Decorate with seasonal sprinkles, if desired. Bake at 400 degrees for 10 to 12 minutes.
